Similar viruses such as HIV, Hep B or Hep C only spread as far as they do because they're shared by sharing needles (which generally requires non-cannabalistic people involved) or by unprotected sex, which I seriously doubt anybody would have with a zombie. All of their bodliy functions have shut down except for a few in the brain that causes them to walk, see, etc. The stomach doesn't break down the flesh, it just stays in the stomach until it gets to full and bursts. Also, if an animal were to get the virus they'd be dead in a couple of hours because their body wouldn't be able to handle the virus spreading up to the brain.
